  3. Southwestern Rubbed Steak
    Use spices generously to make this steak special!

1 lb.      tenderloin steak
1 t.        salt
1 T        brown sugar
1/2 t     cumin
1 t        chili powder
1/2 t.    cayenne pepper
            nonfat cooking spray
Remove any visible fat from the steak.
Mix together the salt, sugar, cumin, chili powder and cayenne pepper.
Press the spices firmly onto all sides of the steak and let stand for 5 minutes.
Lightly coat the grill with cooking spray and preheat for 5 minutes. 
Grill the steak for 5-7 minutes, or according to your preference. 
Cut the steak into 4 portions or slice thinly and serve on a warm platter.
Serves 4.

                                                 2.  Steak Dipping Sauce
                       This full-bodied sauce provides plenty of flavor for any cut of beef.

8 oz.      tomato sauce
2T.        yellow mustard
2T.        dark brown sugar
2T.        low sodium soy sauce
2T.        cider vinegar
2T.        Worcestershire sauce
1T.        lemon juice
2           cloves garlic, finely minced
1           small onion, finely chopped
1T.        fresh parsley, finely minced
Combine all ingredients in a small saucepan and simmer oven low heat for about
15 minutes.  Sauce should be thickened slightly when done.  Cool.  Use
immediately or store in an airtight container in the refrigerator for up to
2 weeks.  Makes 1 1/2 cups.
